Demonstration of High Efficiency Cheese Making Equipment (ST8705-1)

Conventional cheese making uses a vat system to produce the cheese curd. The vat system, because of the way the curd is cut and pumped, produces curd of non-uniform size and shape and also results in significant loss of protein and fat to the whey. Since different sized and shaped curds expel whey at different rates, the curd produced is not uniform in content, resulting in a product that is non-homogenous. ALPMA, a German company, has developed a continuous curd production process that produced curd of very uniform size and shape. The cheese products produced from this curd is very homogeneous and of higher quality than that produced by conventional curd processes. Only one similar system is operational in the U.S. Saratoga Cheese is a new company currently designing and developing a new cheese plant. Since this is a new facility, an opportunity exists to make it the most advanced and efficient facility possible.

Project Description

To demonstrate an advanced, energy efficient curd process at a NYS cheese plant, an ALPMA Koagulator will be installed as part of the construction of a new cheese plant. The productivity, quality, and energy benefits of the technology will be assessed.


Cheese making is a major industry in NYS. The demonstration of advanced technology, which promises to increase productivity and quality while reducing energy use, would benefit this industry. It is expected that there will be an energy reduction of 78% and a 15% reduction in waste water strength (BOD and COD), resulting from this process, compared to current technology.
